Dinner at Sciacca Grill, Valletta.

It is great to note that various restaurateurs are opting to open new establishment embodying the new concept of “premiumised informality”, catering for up-market clients  serving excellent cuisine, with very good service, in comfortable surroundings yet projecting that aura of relaxation rather than the old fashioned stiffness that used to be associated with full-on, fine dining restaurants.

Such restaurants that have come on line during 2014 were: Wejla By Tartarun at Smart City; Caviar & Bull at the Corinthia St. George’s Bay complex, St. Julians; Acqua Terra e Mare at Portomaso, Fork and Cork in Rabat, Malta, and last but not least Sciacca Grill at Valletta. These restaurants have all been visited and all have exceeded expectations. It does seem that the current debate whether or not one should opt to go up-market rather than to continue to provide just mass market services  has already been adopted by the best restaurateurs in Malta. To these I say well done, as we have far too many pizza, pasta, burger joints to last a lifetime.  What we need are new concepts, new ideas, exceptional cuisine using fresh seasonal ingredients coupled with good service. Value for consumers in restaurants is derived from the overall experience and the quality of the food, drink and service, rather than by simply being cheap.

Sciacca Grill the restaurant:

When we are talking about new ideas and new concepts, I was very pleasantly surprised when we visited Sciacca Grill last Friday for dinner. I had heard quite a bit about this place from our associates, but I always like to give a restaurant and its operators a breathing space from opening to when we would review the place. There are no printed menus at Sciacca Grill. In fact when you arrive and are shown to your reserved table, by the way, one must book in advance especially for dinner as the place is always fully booked, the order for drinks is taken and a wine list is placed on the table. Then after a while the restaurant manager would come along and explains the concept. Starters are written daily on a board in accordance with fresh produce bought, and main course orders, which constitute choices of meats have to be done at the counter where all the cuts are explained by the head waiter.

Meat cuts range from 70 days aged Wagyu beef, to a lesser aged cut of Wagyu from Australia, Uruguayan Angus, USDA Angus rib-eye, beef rib-racks cooked sous vide as well as beef chateaubriand cooked on the same method; milk-fed veal TBone, and  cutlets; Tomahawk steaks; fresh pork neck;, etc.

Starters on the board constituted of a daily soup at EUR8; Pasta with Osso Buco at EUR18 (pasta serving is 150gm per portion); risotto with fresh asparagus; beef carpaccio; and cuts of beef and cheeses from the salumeria. Most dishes are served in the centre of the table to be shared if one feels that way.

 Our food choices:

We opted for sharing platters between four persons of the various sausages on offer as well as portions of their grilled scamorza cheese. These were served in hot, cast iron pans, for everyone to share. A basket of hot, fresh bread was also served with a beans and olive oil bowl, and sauces to dip the sausages in.

Main courses: Grilled pork neck; veal cutlet; USDA rib-eye; sous vide cooked beef ribs; grilled in a special Josper oven. Although I am a beef eater, and am a beef specialist myself, not only in choosing the best cuts, but also to cook myself, I have never tasted such a flavourful array of beef as those that came out of this oven. The taste and flavours in the veal, beef, ribs as well as in the pork neck were incredible. Man courses were served with potato and grilled vegetables on the side. Servings were all served on hot plates and board in the centre of the table to mix and share as required.

Desserts were shown on a tary and consisted of panna cotta; mille foglie toffee delight pastry; chocolate brownie and carrot cake. Two mportions of panna cotta and one mille foglie toffee delight were ordered.

Wine list; A very good wine list is offered with some very good wines at the EUR25 range are offered as well as some cheaper or much more expensive ones. Wins are stored in two temperature controlled wine cellars which are glass enclosed in the restaurant, which enances the ambience of the place. Apart from the main restaurant, an inner private room is available for private dinners, business meetings, etc.

We opted for two bottles of a very good Masi Campofiorin 2011 at EUR25 each, which paired perfectly with our food choices.

Still and sparkling water as is the norm, espressos and complementary liqueurs.

Service: Service at Sciacca Grill is well above average. No hassle, efficient and  un-obtrusive.

 Value for money: The total bill for the above food as shown excluding wine but including water and espressos came up to EUR 147 or EUR36.75 per person. Very reasonable.
